Pancake Day has finally arrived, with Brits up and down the UK putting their pancake flipping skills to the test. But if staying healthy is at the forefront of your mind, you can still enjoy the best of both worlds.

Jumping on the air fryer bandwagon, Slimming World has revealed a brand new recipe for Pancake Day to help you cook your favourite treats without feeling restricted. For a stack of fluffy pancakes without the major hassle of flipping in a pan, the weight loss website shared a simple recipe with just four ingredients to create a delicious and healthy alternative.

However, if you are looking for a pan-based recipe, Slimming’s World also has a Scotch-style pancake recipe (jazzed up in the shape of a heart) to help you bring a little bit of fun into cooking. In its new air fryer pancake recipe, Slimming World has given it a ‘cherry Bakewell twist’.

Ingredients

  • 60g plain flour
  • 75ml skimmed milk
  • 3 large eggs
  • ½ tsp of almond or vanilla extract (optional)

Method

Put the flour, milk and 25ml water in a bowl or jug along with the eggs and flavoured extract (if using). Whisk until smooth and lump-free, then season with a little salt and put in the fridge to rest for half an hour.

Heat your air fryer to 200°C. Ladle a sixth of the mixture into one of the holes of a silicone pancake mould and repeat to fill the holes (we could cook three pancakes at a time in ours). Cook in the air fryer for three minutes. Loosen the edges with a spatula and flip the pancakes over, then cook for another two minutes.

Once cooked, slide the pancakes onto a plate and keep warm while you cook the rest. Serve with your favourite toppings – we went with the flavours of a cherry Bakewell, using a handful of defrosted frozen cherries, some fat-free natural yoghurt and one level tbsp flaked almonds (the almonds add 4.5 Syns per serving).
