As we all enjoy making pancakes with our loved ones this Shrove Tuesday, there are some tips you need to know to make your pancakes better than the rest, according to a baking expert. Founder of Candy’s Cupcakes, Candice Bannister, has shared three tips for the perfect pancakes.
Make the first one count
Everyone knows the first pancake is a disaster. This is because most people put the pancake mixture in too soon, before giving the pan time to heat up, ruining your first pancake. However, the trick is to add a little water to the pan before you add the mixture in, if the water sizzles then it’s hot enough for your pancake mixture, however if it doesn’t then you need to leave it a little longer. Another trick is to add some oil, then stick a chopstick in the oil. If it starts to bubble, it’s hot enough.
30 minutes rest
Giving your batter time to rest is the key to making thicker, fluffy pancakes. Allowing the batter to rest for 30 minutes gives plenty of time for the flour to absorb more moisture and release starch, which is the key to giving your pancakes that perfect lift, without making them hard.
Add a splash of sparkling water
Sparkling water naturally aerates the batter, making it the secret ingredient to creating the fluffiest pancakes. When sparkling water comes in contact with heat, it will start to form small bubbles, these bubbles lighten the mixture, giving you a lovely batch of light and fluffy pancakes.
